My Style Musroom Pulav

Basmati rice : 2 cup
Water for cooking : 4 cup
Ghee: 3 tbsp
Large onion:1 sliced
Carrot,Peas 1/2 cup
Cashew nuts (kaju) halved:2 tbsp
Raisins (kishmish):2 tbsp
Cinnamon (dalchini):1 inch piece
Cloves (laung) 4
Gingergarlic 1/2 tsp
Green cardamoms (hari ilaichi)4
Shahjeera:1/2 tsp
Gram Masala 1/2 tsp
White Mushrooms, sliced: 2 cup
Salt and pepper to taste.
Milk 1 tbsp(optional)
Coriander Leaves

  1. First, wash and soak rice for 20 minutes, drain and keep aside.
  2. Heat ghee in a deep pan, add shahjeera and let it splutter
  3. Add the whole spices like cinnamon, cardamoms and clove and let them splutter.
  4. Now add the sliced onions,gingergarlic and fry till they are golden in color.
  5. To this add the mushrooms,Carrot n peas and fry till they lose their water and look a little crispy.
  6. You can now add all the dry fruits and roast them a little.
  7. Add salt and pepper to taste and mix well
  8. Now put in the rice,Gram Masala ,Milk mix well and add water.
  9. Cover the pan tightly and cook till rice is done.
  10. Garnish with Fresh Coriander, and Sliced fried onions and serve immediately.
  11. Serve With Raitha.
